Just a quick reminder that I’m scheduled to teach Food Preservation classes at three continuing education locations this fall. There seemed to be a lot of interest in these classes when I was at the Dutchess County Fair, but sign up has been so low that all three are in danger of being cancelled. The courses in Red Hook and Rhinebeck are scheduled to start next week, on Wednesday & Thursday respectively, so if you are interested you need to sign up very soon. The course at SUNY Ulster in Kingston starts Monday September 27 so if you’re interested in that course you have a little more time, but not much.

The courses are comprehensive looks at food preservation, covering freezing, drying, and canning. It covers theory and each class has practical demonstrations, including opportunities for student participation, and you go home with samples.
